Mix the first four ingredients together in a medium bowl, so that the fruit is evenly distributed throughout the dry mix.
Pour over the apple juice and mix well.
Cover and refrigerate overnight. If you're in a hurry, an hour will do.
Stir in the yoghurt to loosen the mixture. The mix can be further thinned with extra yoghurt or milk, if desired.
Spoon into bowls (about 150g - 200g per portion) and top with fresh fruit and nuts.
The bircher muesli will keep for a further 2 days in the fridge, after the yoghurt addition.
Top tips:
Be experimental with the dried fruit combinations - our current favourite is apple, strawberry and apricot, but cherry and pear is equally delicious.
The fresh fruit and chopped nut topping add extra flavour and texture - blueberries and/or peaches work really well.
Throw open the cupboard of possibility, the freezer of anything goes. Add a splash of this, a sprinkle of that, and a good dollop of winging it. Go Forridge.
